Ground Pork in Tomato Sauce and a Bunch of Awards

My pollen allergy is acting up and I'm still not feeling well, but the bunch of awards I received today from Manu of Manu's Menu is enough reason to do a Monday post and share this recipe with you. :) It's called Ground Pork in Tomato Sauce or simply, Giniling na Baboy in the Philippines.

Giniling na Baboy which means Ground Pork is one of the traditional Filipino dishes that shows the richness of flavor and color of Philippine food heritage. The main ingredient of Giniling na Baboy is lean ground pork which is sauteed with striking colors of vegetables like potatoes, carrots, red bell peppers and green peas in rich tomato sauce. 

This is one pork dish that you should try! So simple yet so delicious!

Prep Time: 10 mins          Cook Time: ~20 mins           Servings: 4-6                              

Ingredients:
  • 1 lb ground pork
  • 1 medium-sized potato, diced
  • ½ small onion, minced
  • 6 cloves garlic, minced
  • 3 Tbsp raisins
  • 1 medium-sized carrot, diced
  • ¼ cup grean peas (my daughters aren't fans of green peas so I omitted this)
  • ½ red or green bell pepper ( I used ¼ red and ¼ green to replace the green color from green peas which I omitted)
  • 1 8oz-can tomato sauce
  • 1 Tbsp fish sauce
  • 2 Tbsp oilive oil
  • Salt and pepper to taste

Procedure:
1. Over medium heat, sauté garlic in olive oil until light brown.
2. Add onion. Sauté until almost translucent.


 
3. Add pork. Sprinkle with salt and pepper. Saute until pork turns brown and juice starts to come out. 


 
4. Add tomato sauce and fish sauce. Mix well. Cover and simmer for 5 minutes.


 
5. Add potatoes, raisins and bell pepper. Simmer until potatoes and bell pepper are almost cooked.


 
6. Add carrots. Sprinkle with salt and pepper to suit your taste. Simmer for about 5 minutes or until all vegetables are cooked but still crunchy.
6. Remove from heat and serve with rice.

  7. Reminds me of a dish my mother made a lot when I was a kid - pork chops simmered in tomato sauce. The tomatoes make the pork so tender and flavorful. Delish!!
